Healthy Breakfast Idea

They say breakfast is the most important meal of the day, right? That's why it's super important to always make sure that your breakfast is nutritiousfilling and most importantly DELICIOUS! Over the past few months I've been experimenting with a bunch of different breakfast recipes that fit this criteria and it's fair to say that this one scores a close second under my go-to pancake recipe (will be up soon!) 

What I love most about this breakfast is how many different flavours are incorporated. The avocado is flavoured with lemon juice and pepper - adding a slight tang, whilst the tomatoes add a really fresh and juicy taste which I love. Let's not forget to mention that the tomatoes are also an excellent source of vitamin C, whilst the superfood kale is filled with powerful antioxidants and contains all of the essential vitamins A, C and K as well as minerals like copper, potassium and iron!

I then just mashed up half an avocado in a small bowl, adding some black pepper and lemon juice to bring out its flavour. Once I reached a consistency that I wanted, I spread the avocado on a small piece of wholemeal toast. I then sliced the other half of the avocado into strips and cut up a large tomato to add some colour and flavour!
